Cottage cheese pancakes
This is a great recipe that I eat anytime of the day.
½ cup dry oatmeal (I use Quakers old fashioned oatmeal or arrowhead steel cut oats)
½ cup low fat cottage cheese (I use Friendship 1 percent fat cottage cheese)
3 egg whites or ½ cup egg beaters
1-2 packets splenda
¼ cup sugar free syrup (I use Vermont sugar free syrup)
Calories – 315, Fat- 5g, Protein – 27g, Carbs – 32g, Fiber 4grams (you get 8 grams of fiber with arrowhead steel cut oats)
Directions: Put all the ingredients in a blender and blend until smooth. Preheat pan on medium heat and spray with cooking spray. Pour the batter in the pan as you see fit. I usually make three pancakes out of this recipe.
When the pancakes are done heat the syrup in the microwave, then pour it on the pancakes and enjoy! Serve with a cup of coffee or green tea and a tall glass of cold water.

Mclovin Nuggets
6 oz raw boneless skinless chicken breast
2tbsp egg beaters
½ cup fiber select cereal from giant
Calories – 230, Protein – 39g, Fat – 2g, Carbs – 23g, fiber 14g
Optional: if you want you can season the chicken with black pepper, garlic, and Italian seasoning.
Directions: Preheat pan on medium heat and spray with cooking spray. Put fiber cereal in food processor until it is in powder form and pour powder onto a plate. Then Cut raw chicken into thin slices or pieces. Next dip each piece of chicken in the egg beaters and then in the fiber powder until fully covered. Place Mclovin Nuggets in pan, cook, and serve with a side of vegetables and if you desire one tablespoon of organic ketchup. (Organic ketchup is free of "High Fructose" Corn Syrup if you find an alternative ketchup free of the ingredient use that)

There isn't solid evidence that organic food is better than non organic. I don't believe you have to spend the extra money you get charged.
In response to the statement above. The reason I said use organic ketchup was to avoid the "High Fructose" Corn Syrup (HFC) found in regular ketchup. Organic ketchup was the only kind I have found that doesn't contain HFC. Organic products, although expensive are a great way to avoid the two diet killers, HFC and Partially Hydrogenated Oils. You can however still find products free of these ingredients at a normal grocery store, so use organic foods as an alternative if you can't find a product you desire at a normal grocery store that is free of these ingredients.
