Heres a great variation on the Chicken Bossadellias. The cheese melts nicely into the beans and taste amazing. The beans also add six grams of fiber and six grams of protein.
Ingredients:
1 large “Smart and Delicious” tortilla wrap made by tortilla factory. (these are great tortilla wraps I use all the time. They come in whole wheat, rye, pumpernickel, and rosemary and are packed with 12 grams of fiber, 8grams of protein, and 3 grams of healthy fats made from olive oil. You can find them at the deli section at your local Giant grocery store) You can also use any large whole wheat tortilla wrap if you want.
3 oz cooked chicken breast
¼ cup “Sargento Mexcian blend” reduced fat cheese (Sargento)
1/4 cup fat free "Old El Paso" Refried Beans (Old El Paso)
Cilantro to your taste
Optional: 1 tbsp fat free sour cream, 2 tbsp salsa
Directions:
Heat non stick pan on medium heat and spray with Pam or other cooking spray.
Cut chicken breast into small pieces and place in bowl
Place tortilla wrap in pan and let sit for a minute
Add cheese, beans, chicken, and cilantro to tortilla and fold the tortilla in half.
Cook a couple minutes or until brown then flip the tortilla and repeat
Cut finished tortilla into sections like a quesadilla and serve
If you desire top with sour cream and salsa
As for the salsa and cilantro I like to them in with the chicken and cheese, but you can also pour the salsa and sprinkle the cilantro on top of the quesadilla when it’s finished.
